Zero Food Waste Challenge

Calling all New York City Chefs!
New York City businesses throw away more than 650,000 tons of food waste annually. But chefs know that food scraps are not garbage. Restaurant trim can be used to feed people and animals, nourish soil, grow healthy food, and create energy.
We are seeking talented chefs to create the ultimate “zero food waste” dish for the 2019 Food Waste Fair. Each dish must incorporate an “upcycled” ingredient of the chef's choice. The winner will be chosen by a panel of food industry experts, based on creativity, taste, presentation, and most importantly, waste diversion.
Submissions are due February 22 at 5pm ET.
Chefs must be affiliated with an establishment that provides food service in NYC, including but not limited to: restaurants, food pantries, catering companies, cafeteria service providers, fast-casual and others.
Selected chefs will be required to attend the challenge and serve 350 samples of the selected dish, and feature their dish on their menu for limited time.
Participating chefs will receive a stipend.
All excess food from our event will be rescued by our charity partner, Rethink Food NYC.
